Packed with calcium, iron, manganese and protein (source), tofu is an excellent replacement for meat. Unlike the protein contained in animal-based calcium, calcium-enriched tofu provides an alkaline environment which does not result in calcium being leached from bones (source). Therefore, calcium-enriched tofu, along with the manganese it contains, actually helps build strong bones as well as prevent osteoporosis.
When I first had tofu, I didn’t like it. Reason being that I didn’t know how to prepare it. This versatile food which can take on the flavor of nearly anything, can be prepared in many ways, and if done correctly, can imitate eggs, meat, and other animal-based foods. These quick and easy Curry Seasoned Tofu Bites are not only nutritious, but serve as a tasty side dish.
Curry Seasoned Tofu Bites
1 (14-ounce) package extra firm tofu
1 tablespoon canola oil
3/4 teaspoon dill weed
3/4 teaspoon onion powder
1/2 teaspoon garlic salt
1/4 rounded teaspoon curry powder
Drain tofu and wrap in a towel. Place a heavy item over it such as a plate and allow to sit for 15 minutes, removing excess moisture.
Heat canola oil in frying pan over medium heat. Cut tofu into 1-inch cubes and place into heated pan. Cook, turning occasionally, for approximately 10 minutes or until lightly browned on all sides. Remove from heat and add remainder of ingredients, stirring to combine.
