Oatmeal Banana Breakfast Cookies

Oatmeal is a breakfast staple in many households throughout the country. Often enhanced with brown sugar and various other sweeteners, prepackaged oatmeal can contain a large amount of sugar, rendering it less healthy than intended. One such example is that of a popular fast food chain who’s oatmeal contains 32g sugar!

Inspired by a recipe I enjoyed on one of my many detoxes, these Oatmeal Banana Breakfast Cookies are an excellent way to start your day. Containing natural sugars provided by fruit, these cookies are also perfect as a pre-workout energizer.

Oatmeal Banana Breakfast Cookies

Oatmeal Banana Breakfast Cookies
Yields 8-10 cookies

3 large ripe bananas, mashed
1/3 cup unsweetened peanut butter (creamy or crunchy)
1/4 cup unsweetened applesauce
2-1/4 cups quick-cooking oats
1/3 cup oat flour
1/2 teaspoon baking powder
1/4 rounded teaspoon ground cinnamon
pinch salt

Preheat oven to 350º F. Cover a baking sheet with parchment paper and set aside.

Mix together bananas, peanut butter and applesauce until combined; set aside.

In a separate bowl, combine oats, flour, baking powder, cinnamon and salt. Add to banana mixture and stir to combine.

Place 1/4 cup fulls of batter approximately 2 inches apart on prepared baking sheet. Bake in preheated oven for 15-17 minutes, or until a toothpick, when inserted near the center of a cookie, comes out clean.

Prefer more sweetness? Add 1-2 tablespoons pure maple syrup as well as an additional tablespoon or two of flour (as needed) and proceed with the recipe as directed.

Holiday Chocolate Peppermint Martini

As we wrap up our holiday shopping (pun intended) and finalize our travel plans this holiday season, many of us can’t help but to think of what delicious food and drink we will be enjoying before the New Year. One particular ingredient that comes to mind when I think of the holidays is peppermint. This cool and refreshing herb is the star of many beverages and desserts during this time.

Fresh peppermint is a very good source of Calcium, Copper, Dietary Fiber, Folate, Iron, Magnesium, Manganese, Potassium, Riboflavin, and Vitamins A and C. It is also a good source of Niacin, Phosphorus and Zinc (source). In addition, peppermint boasts various health benefits. Check them out in a previous post, here.

This easy and festive martini features chocolate and peppermint to satisfy your sweet tooth, with a candy cane dusted rim. Should you prefer, a virgin beverage can be made by either adding ½ to 1 teaspoon candy cane dust or ¼ to ½ teaspoon peppermint extract (depending on how flavorful you want your drink). Add an extra shot of almond milk in place of the peppermint schnapps.

Chocolate Peppermint Martini

Holiday Chocolate Peppermint Martini

1 regular-size peppermint candy cane
2-1/2 shots regular unsweetened almond milk*
1/2 shot peppermint schnapps
1 tablespoon non-dairy chocolate syrup
1 ice cube

Chocolate Peppermint MartiniUsing a food processor or mortar and pestle, process/crush candy cane until it reaches a consistency similar to that of dust. Dip rim of martini glass into water and then dip into candy cane dust; set aside.

Combine almond milk, peppermint schnapps, chocolate syrup and ice cube in a martini shaker. Shake vigorously for 10-15 seconds and pour into martini glass. If desired, garnish with non-dairy whipped cream and a sprinkle of candy cane dust.

*Should you prefer an even creamier beverage, you can easily substitute your choice of non-dairy creamer in place of the almond milk.

Pink Pearl Apples

Pink Pearl is a type of apple cultivar developed by Albert Etter in 1944, and is typically available late-August through mid-September (source).

Never did I know that a pink-fleshed apple existed before digging into the organic produce box I received the other weekend. Seemingly normal on the outside with a yellowish-green exterior, the bright pink-colored flesh within boasts a sweet-tart flavor. If you’re a fan of tart apples, Pink Pearls are excellent when consumed by themselves, but also great for use in ciders, pies and sauces. Alas, these beauties aren’t widely available at your typical grocery store (at least not here in the midwest), so if you’re able to find Pink Pearls, I suggest picking some up.
